i am thinking i want to try my hand at catering i have been a su chef at a university for about a year now.... i also have basic knowledge in food prep. i am wondering how and what it takes to have a small operation and if i can compete with larger companies?? if anyone has some serious ideas and thoughts i really would appreciate it thanks in advance
